Healthy Snacks

You can eat healthier too! Learn Jennifer Menon’s top 5 health and delicious after-school snacks.

Loaded Oatmeal Cookies

Prepare a 17.5-ounce package oatmeal cookie mix as the label directs, (or you can use your favorite recipe). Substitute 1/2 cup applesauce for the butter or oil and add 1/4 cup wheat germ and 1 cup each chopped mixed nuts, dried fruit and shredded coconut to the batter. Bake as directed.

Apple Toppers

Slice any kind of crisp apple into wedges. You many need a grown-up to help you. Then, spread on some almond butter or peanut butter, and top with granola.

Berry Good Smoothie

In your blender mix 1 cup of vanilla yogurt, 1 cup of frozen strawberries, 1 frozen banana, and 1/4 cup of orange juice. Mix until smooth. Pour into a glass and enjoy! Get creative and try other fruits or add some spinach for a good dose of delicious, healthy greens!

Mango Salsa Scoops

In a small bowl combine 1 cup of diced mango and 1 can of drained black beans with 1/4 cup of diced red onion. Add 2 cups of your favorite salsa. Serve in multi-grain tortilla scoops. Be sure to invite some friends…this makes enough to share.

Yogi Pies

Break some graham crackers in half. Spread with your favorite flavor of greek yogurt. We love blueberry! Top with sliced bananas. Sprinkle with nutmeg. You can be adventurous and try strawberries, raspberries, blueberries, mangoes, too. And once in a while try some mini semi-sweet chocolate chips.
